This course covers recent assessment methods and interpretation of results to assess and diagnose the nutritional status of individuals and groups. Assessment techniques for measuring diet, blood glucose, insulin, plasma lipids, minerals and vitamins are reviewed. Additionally, techniques for assessing body composition and energy expenditure are covered. Students will also learn theoretical and empirical principles from motivational interviewing and practice the clinical skills needed to use this approach in healthcare settings to promote healthy behavior change. |
